What Cork does that Dublin cannot
Dublin’s Bow Street is the original 1780 distillery and a genuinely good visit, but distilling left it in 1975 - the comparison is set out honestly here. Cork keeps the process: mash, wash, the enormous pot stills, the maturation warehouses where the county’s damp air does the slow work. Whiskey people notice the difference immediately. Casual visitors often prefer Dublin’s polish, and that is a legitimate preference rather than a mistake.
